Is the dough made fresh?

We take great pride in the process we use to make our fresh pizza dough.  Our base is made up of four important ingredients; Caputo Pizzeria Flour (Italy’s Finest), Fresh Yeast, Salt and Water.

 

Is the oven gas or wood fired?

Our oven is 100% wood fired, no gas or electricity whatsoever. 

 

How quickly can you cook the pizzas?

Pizzas can be cooked in as little as 2 minutes.

 

What payment methods do we accept?

We accept Credit Card (via email or phone; a surcharge applies) or Bank Transfers prior to the event. Unfortunately we can not accept Cheque payments.

 

How do you serve the pizza?

The wood fired pizza is served cut on wooden paddles and placed on a table where your guests can help themselves at their convenience. You are welcome to provide your own waiters to distribute the pizza’s around to your guests or we can provide waiters at an additional cost.

 

Is a deposit required for bookings?

We take a 25% deposit to secure your booking. Once the deposit has been received your function is locked in. Should you decide to cancel your function, we are happy to transfer the deposit to another available date. Full cancellation will result in forfeiture of the deposit.

 

What is your minimum for catering?

Our Basic, Traditional and Gourmet Packages have a minimum charge (see Packages).

 

How much space do we need?

Our oven is fixed to our custom made trailer and requires a 2.4m clearance. When we set up we require a firm, flat surface and enough room for the Mobile Oven trailer (3m x 5m) and a 3m x 3m gazebo next to it.  Please note: our custom oven trailer is heavy and may sink into soft surfaces.

 

What if it rains on the day of the event?

We are equipped and prepared to work through most weather conditions. Should the weather be undesirable you should ensure that your guests will be comfortable and covered and we will be able to look after our set-up.

 

How long do you stay for?

We provide up to 3 hours of cooking time in our food packages. During this time we will make pizzas until your guests are satisfied. The up to 3-hour cooking time is in addition to the set up time prior to your event (we require at least 2 hours prior to the event for set up).

What happens on a Total Fire Ban day?

We hold a permit from the NSW RURAL FIRE SERVICE to operate during a Total Fire Ban. We must, however, notify the nearest Fire Station of our location and time of event.

On days where the Fire Danger Rating is predicted to be Extreme or Catastrophic, a request may be made by the authorities to suspend cooking depending on the location of the event. In these circumstances we will provide a refund less the sum of the initial deposit or reschedule the date of event if suitable.
